Pumpkin Bread Recipe
Happy Thanksgiving!
Pumpkin Bread
Sift together into a large bowl:
3 ½ cup flour 1 teaspoon cinnamon
2 teaspoons baking soda 1 ½ teaspoons salt
1 teaspoon nutmeg 3 cups sugar
½ teaspoon ginger
(If you want it less sweet with more spice, use 2 cups of sugar and double the nutmeg, ginger, and cinnamon)
Mix in:
4 eggs
1 cup salad oil
2/3 cup water
1 small can pumpkin (2 cups)
(You can also add ½ cup chopped nuts, OR ½ cup chocolate bits.)
Turn into 1 large greased, floured loaf pan or 4 small loaf pans. Don’t fill over ½ full.
Bake at 350 degrees for 1 to 1 ½ hours for large loaves, less for smaller containers.
